We had already demolished the cookie dough brownies.
And I wanted to try out something else.
This was perfect.
Key Lime Pie
(Raw and Vegan)
So if you are planning on making any raw desserts,
I suggested stocking up on dates.
You'll be using them for everything.
They replace your sugars, flours, eggs.
They are pretty amazing.
I can't actually stock up on them,
The Crab is addicted to dates,
and will eat every one that he sees,
specially with toasted coconut.
Those are his favorites.
But I had gotten enough dates that I still had some left.
I learned from the last recipe,
You are going to want to chop your dates,
This makes things a little easier on your blender.
About 8 to 10 dates.
Blend them till you start to get some mush.
They are super sticky,
If you have a food processor,
You should be fine,
If you just using a Vitamix, like me,
Be careful not to over heat it.
Which I might have done to our blender.
About 6 times...
I told my Crabby love that I needed a food processor.
He told me to go live in Africa,
Then come back and try bitching about a food processor.
See if he gets any pie with that attitude.
About 1/2 cup of almond flour.
And a half cup of pecans or almonds.
Or both.
I have to admit, I might have lied to you.
Yes, I know, it is terrible.
I'm so sorry.
I toasted my pecans and almonds.
This ruins my claims of raw.
I didn't know!
My recipe said it was raw.
Then said use toasted almonds!
How are they toasted and raw?!
Crab caught me pulling them out of the oven,
Told me I was filled with deceit.
He threatened to out me!
Then I let him try a toasted pecan...
He's been asking me to toast more since.
They are just so flavorful and buttery.
But I had to admit my lies.
So you know, this recipe isn't completely raw.
Everything else is raw.
But the pecans.
And the almonds.
Please, forgive me.
Anyways, after you have finished cursing me.
And my deceit.
Throw those suckers in your blender.
A pinch of sea salt.
Yes, I know you are checking out my awesome ring.
My best friend gave it to me.
As you can see, it says friends.
It actually says Best Friends,
But the best is hidden.
It might look like my finger is green,
But that is just your own pure envy you are seeing.
Jealous of my friendship.
Don't worry,
We can be friends too.
About 2 tablespoon of coconut oil.
I melted this slightly in hot water,
Again breaking raw laws.
I'm a raw renegade!
And a teaspoon of vanilla.
After it has taken you entirely too long,
With the overheating,
And the stabbing the mixture
Mixing it
Pulling it out
Letting the blender cool
And stabbing some more.
You'll have your pie crust!
Put this into your pie tin.
And put into fridge.
Now the filling!
3 ripe avocados.
You want them just ripe.
Ripe enough to be soft,
but not so ripe to have that strong avocado flavor.
p.s, one of those avocados was purchased at the mexican store,
the other two from the co-op,
can you see how big and beautiful the mexican one is.
Yaay Meehico!
You are going to need about 1 cup lime juice.
About 8 full size limes
And 5 or 6 key limes.
You can use all key limes,
Or all plain limes,
Whatever your heart desires.
I used a combination,
Because I don't have a citrus juicer,
I had to do it all by squishing them in my hands
And well key limes are way blasted small.
After you have discovered every small cut or hang nail on your hand,
You should have a similar lime graveyard.
And about a cup of lime juice.
I like to scrape all the pulpy remains in as well.
And 1/3 cup honey,
You can also use maple syrup, or agave.
We had recently purchased local raw organic wildflower honey.
Crab has been having bad allergies,
So I have been putting local honey in everything.
Yummy natural remedies.
Add about 3 tablespoons of almond flour.
And blend it all up!
You should have a fun bright green combination.
Revel in your key lime with no colorings,
Just delicious natural bright green.
Now pull your 2 cans of coconut milk out of the fridge.
Ooops, I didn't say this earlier,
You should put coconut oil in the refrigerator overnight.

Maybe you should read through all the way before starting on a recipe!
Anyways,
Your coconut milk should have been sitting in the fridge overnight,
This allows it to separate,
The thicker coconut cream solidifies at the top,
The watery remains at the bottom.
We won't be using the watery bits,
But I suggested throwing it into a smoothie!
Put thicker top layer of coconut milk into bowl.
Add about 2 tablespoons of almond flour
Using a hand mixer,
Blend until it thickens.
Mix in avocado mixture.
Isn't that a nifty picture?
It just looks so pretty,
The avocado all gradient as it combines,
Ah, the art of baking.
After it is all combined,
Pour into your pie tin.
Place into freezer.
You can freeze overnight,
Or for at least 3 to 4 hours.
Also beware, this is rather ice cream-esque,
If left out for longer than 30 minutes or so,
It will start to melt again,
So keep COLD!
Whipped Cream
Of course, what key lime pie would be completely without,
Whipped Cream?
Pull out that third can of coconut milk.
You had a third can in the fridge already right?
This one has separated beautifully.
So for future reference, this brand,
Natural Value,
Is fantastic.
This brand,
Not so much,
Didn't really separate.
Your watery remains.
Not good for this recipe,
But throw it into some curry,
Or a smoothie.
Delicious.
Now using your nifty hand mixer,
Thank goodness,
Snail and 'Nut, got you this hand mixer for your birthday.
Blend until it thickens.
You now have whipped cream!
Pull pie out of freezer.
Slice and decorate.
Dollop of cream,
Key lime zest,
And a slice of key lime.
Isn't it beautiful!
